Ham ‘N’ Noodle Toss

Ramen noodles are fantastic. Not only do they cook in under ten minutes, but you can also get a package for less than 25¢ at Kroger - or you can get a 24 pack for just over $15 on Amazon. Either way, it’s cheap and cooks quickly. Perfect for dorm rooms, lazy cooks or a time crunch.

My mother made a meal with Ramen when I was little that I absolutely loved, so I got the recipe from her and have made it a few times now that I’m out on my own. It’s easy and I still love it - also, shout out to my mom for finding a painless way to make a 6 year old enjoy broccoli without copious amounts of Ranch. Quick copyright disclaimer, she found this recipe in a Good Housekeeping magazine during the 90’s (she thinks). Then in the early 2000’s we also sent it in to be published in our church cookbook so this is by no means an original recipe.

 

What you need:

 

2 cups broccoli florets

1 3/4 cup water

1 3/4 cup fully cooked ham (I chop up lunch meat, and turkey works well too)

1 Tbsp. Soy sauce (I use more, but the original recipe only calls for this much)

2 pkgs. (3-oz each) oriental-flavored ramen noodles

Sliced ripe olives (optional)

In a large saucepan, combine broccoli, water, ham, soy sauce and one flavoring packet from the noodles (you could use both if you want the extra flavor or save for future use). Break noodles into small pieces and add to pan. Simmer, uncovered, for 6 to 8 minutes or until noodles are tender, stirring frequently. Top with olives if desired. Makes 4 servings.

 

Those 4 servings will depend on how large your own serving size is. I also have stopped using the flavoring packets at all. The flavoring packets themselves contain this compound called MSG and it’s pretty terrible for you. Granted it probably won’t hurt you if you don’t eat it very often but I just skip it altogether anyway. I add more soy sauce and some onion powder or a chicken broth cube depending on the day. Those are just my changes though, feel free to ignore them and make your own changes (as if I could control that).
